Absent Stars Cocktail Recipe

In New Orleans, Nick Detrich has gone back to the foundation of tiki—the early tropical blueprints that you might find in the scribblings of Charles H. Baker—to build a new breed of tropical drink that he hopes is evocative of a time in NOLA’s history when the city was “the gateway to the tropics.”

In going back to the foundation of tiki and building on top of it, he’s created something wholly modern. The result is drinks like his Absent Stars, a combination of Campari, rhum agricole, lemon juice, passionfruit syrup, apricot brandy, saline and grapefruit bitters, which, says Detrich, “takes the tropical notes of a classic tiki drink, but significantly dries them out.”

Ingredients

Serving: 1

  • 1 ounce Campari
  • 1 ounce Campari
  • 1 ounce rhum agricole, preferably La Favorite Blanc
  • 1 ounce rhum agricole, preferably La Favorite Blanc
  • 3/4 ounce lemon juice
  • 3/4 ounce lemon juice
  • 1/2 ounce passion fruit syrup (1:1, simple syrup:passion fruit purée)
  • 1/2 ounce passion fruit syrup (1:1, simple syrup:passion fruit purée)
  • 1/2 ounce apricot brandy
  • 1/2 ounce apricot brandy
  • 5 drops saline
  • 5 drops saline
  • 10 drops grapefruit bitters
  • 10 drops grapefruit bitters

Garnish: orange twist

Directions
  1. Build in a shaker tin, add Hoshi cubes and shake 20 times.
  2. Fine-strain in a chilled glass.
  3. Season sides of glass with the orange twist then mount.
