Aperol, the classic Italian ingredient from Padua, provides the lightly bitter base for this afternoon cooler. Proportions are flexible, but both a hefty dose of the sunset-colored, bitter orange and gentian-flavored aperitif and a base of dry prosecco are the drink’s constants.
- 2 ounces Aperol
- 3 ounces sparkling wine (preferably dry prosecco)
- 1 ounce soda water
Garnish: orange or lemon wheel (or both)
- Add Aperol and sparkling wine to a Collins or wine glass.
- Add ice and stir.
- Top with soda water and garnish with an orange or lemon wheel (or both).
