At New York City’s first cider bar, Wassail, cider cocktails are a mainstay, and bartender Jade Sotack rotates her Gin & Juice seasonally. “The Gin & Juice is a seasonal take on sidra, plus an adjunct,” she explains.

A recent iteration saw a play on the G&T: tonic syrup and gin topped with sidra, for a funkier version of the classic refresher.

Ingredients

Serving: 1

  • 1/2 ounce gin, preferably Royal Dock
  • 1/2 ounce gin, preferably Royal Dock
  • 1 ounce tonic syrup, preferably Yeoman from Small Hand Foods
  • 1 ounce tonic syrup, preferably Yeoman from Small Hand Foods
  • 4 ounces sidra, preferably Trabanco
  • 4 ounces sidra, preferably Trabanco

Garnish: lemon peel

Directions
  1. Add all ingredients to an ice-filled Collins or double rocks glass, and stir to combine.
  2. Garnish with a lemon peel.
