Ryan Gannon originally created the Once Over #2 for an agave spirits pop up at New Orleans’s Cure. With a name inspired by an ’80s punk rock song, The Once Over #2 is the frozen, boozier, spin on the Cure’s original Once Over, a low-proof, refreshing summer sour.

“I decided to do the #2 frozen,” says Gannon, “with a float of mezcal, because it’s hot, and frozen drinks look great when you present them in a fancy glass, with a big bouquet of mint stuck in!”

Ingredients

Serving: 1

  • 1 1/2 ounce Aperol
  • 1 1/2 ounce Aperol
  • 3/4 ounce lime juice
  • 3/4 ounce lime juice
  • 3/4 ounce orgeat
  • 3/4 ounce orgeat
  • 1/2 ounce tequila
  • 1/2 ounce tequila
  • 5 mint leaves
  • 5 mint leaves
  • 1/4 ounce mezcal, to float
  • 1/4 ounce mezcal, to float

Garnish: 1/4 ounce of mezcal, mint bouquet

Directions
  1. Add all ingredients except the mezcal to a blender.
  2. Add two cups of ice, and blend until smooth.
  3. Pour into glass and garnish with a mint bouquet and a float of mezcal.
Editor's Note

Start with less ice; add more as you blend until you've achieved your preferred texture.
