At Amor y Amargo, where all ten menu items are batched or prepared, Sother Teague explains that not only does this technique ensure consistency (“you’re getting soup from the same pot”) it enables a higher level of precision in a single drink. A minuscule amount of one ingredient, such as Japanese chili and lime bitters, diffused into a 750ml bottle, as in this slightly spicy Martini riff, creates an effect impossible to recreate in a single pour.

Ingredients

  • 8 1/4 ounces gin, preferably Beefeater
  • 8 1/4 ounces gin, preferably Beefeater
  • 4 1/8 ounces Salers Gentiane Liqueur
  • 4 1/8 ounces Salers Gentiane Liqueur
  • 2 3/4 ounces Amaro Nonino
  • 2 3/4 ounces Amaro Nonino
  • 1/8 ounce Japanese chili bitters, preferably 18.21 Bitters
  • 1/8 ounce Japanese chili bitters, preferably 18.21 Bitters
  • 9 ounces water
  • 9 ounces water

Directions
  1. Add all ingredients to a 720 or 750ml bottle.
  2. Seal and store in the refrigerator.
