‘Spicy With Tequila’

At The Pastry War, Bobby Heugel turns this drink when a guest asks for something spicy with an agave spirit. “I assume they want something more intriguing than the habanero Margarita that is on our menu,” says Heugel, “So, typically, [I] offer this little number.”

A mix of tequila, green Chartreuse, lime juice, agave nectar, mint and a house-made habanero tincture, The Pastry War’s response to a “spicy, with tequila” request is undoubtedly more challenging than a spicy Margarita, with the cool sensation of mint contrasting sharply with the heat of the chile, and the unexpected herbaceousness of Chartreuse.

Ingredients

Serving: 1

  • 2 ounces tequila, preferably Tapatio Blanco 110
  • 2 ounces tequila, preferably Tapatio Blanco 110
  • 1 ounce lime juice
  • 1 ounce lime juice
  • 1/2 ounce green Chartreuse
  • 1/2 ounce green Chartreuse
  • 1/2 ounce agave nectar
  • 1/2 ounce agave nectar
  • 10-12 mint leaves
  • 10-12 mint leaves
  • 2 dashes habanero tincture (See Editor's Note)
  • 2 dashes habanero tincture (See Editor's Note)

Garnish: Tajin, lime, two mint sprigs

Directions
  1. Combine all ingredients in a shaker.
  2. Shake and strain into a Collins glass with crushed ice.
  3. Garnish with Tajin dusted on top, a lime and two mint sprigs.

Habanero Tincture:

12 seeded and destemmed habaneros
1 liter of vodka

Drop habaneros into vodka and let stand for two weeks.
