Firewater Public House’s cocktail captures all the flavors of a hot toddy in refreshing highball form.

Tip Your Bartender is a social media initiative from PUNCH connecting our readers with bar teams across the country via Instagram. We’re asking select bartenders to share their drinks (albeit virtually) and encourage the PUNCH audience to “tip” during the economically uncertain times ahead.

The Covey Rise

Firewater Public House | Saratoga, Wyoming

The marriage of ginger, citrus, star anise, tea and rye spice in Firewater Public House’s cocktail captures all the flavors of a hot toddy in refreshing highball form. An easy-to-make anise honey syrup adds lift and dimension, accompanied by pantry staples: Earl Grey tea and ginger beer.

1 ½ ounces Angel’s Envy rye
½ ounce lemon juice
¾ ounce anise honey syrup (see Editors’ Note)
1 ounce brewed Earl Grey tea
2 ounces ginger beer

Garnish: whole star anise 

Shake all ingredients except for ginger beer with ice. Strain into a double rocks glass over fresh large cubes. Top with ginger beer, and garnish with star anise.

Editors’ Note

Anise Honey Syrup

½ cup sugar
½ cup honey
1 cup water
½ cup whole star anise

Add all ingredients to a small saucepan. Bring to a boil then reduce temperature and simmer for 10 minutes. Cool slightly and strain. Bottle and refrigerate.
