Tip Your Bartender is a social media initiative from PUNCH connecting our readers with bar teams across the country via Instagram. We’re asking select bartenders to share their drinks (albeit virtually) and encourage the PUNCH audience to “tip” during the economically uncertain times ahead.

Churchill Old Fashioned

Julio Cabrera, Cafe La Trova | Miami, Florida

Julio Cabrera presents Cafe La Trova’s take on the classic Old-Fashioned template by way of Venezuela. The dead-simple Santa Teresa 1796–based build is lifted by a small amount of demerara syrup and homemade coffee-tobacco bitters.

2 ounces Santa Teresa 1796
¼ ounce demerara syrup (2:1)
4 dashes of homemade coffee-tobacco bitters

Garnish: grapefruit peel

Combine all ingredients in a mixing glass with ice. Stir and strain into an Old-Fashioned glass over a large cube of ice. Garnish with grapefruit peel and an optional small cigar on the side.

Coffee-Tobacco Bitters
Mix equal parts Bitter Truth Essence of Cuba Coffee and Bitter Truth Essence of Cuba Aromatic Leaf bitters. Crude “Big Bear” Coffee & Cocoa Cocktail can substitute for the blend.
