Tip Your Bartender is a social media initiative from PUNCH connecting our readers with bar teams across the country via Instagram. We’re asking select bartenders to share their drinks (albeit virtually) and encourage the PUNCH audience to “tip” during the economically uncertain times ahead.

Velvet Voices

Brendan Biggins, Grand Army Bar | Brooklyn, New York

The Grand Army team regularly uses bianco vermouth in a Manhattan template to create round, easygoing, yet nuanced stirred drinks. This variation has notes of caramel and white flowers that recall the Townes Van Zandt song it’s named after.

1 ½ ounces Angel’s Envy bourbon
1 ounce Carpano Bianco vermouth
¼ ounce honeysuckle tincture (see Editors’ Note)
scant ¼ ounce Wild Turkey 101 bourbon
1 dash Angostura bitters

Garnish: lemon twist

 Combine all the ingredients in a mixing glass. Add ice to the mixing glass and stir. Strain into a Nick and Nora or other stemmed glass. Garnish with an expressed, then discarded, lemon twist.

Editors’ Note

Honeysuckle Tincture

Combine 1 gram of dried honeysuckle per 1 ounce high-proof vodka. Shake the mixture, then steep for 6 hours. Strain and reserve the infused vodka.
