Kristina Magro and Greg Fleming’s Midwestern take on a Cosmopolitan replaces the traditional cranberry base with an unexpected pop of citrus.

Welcome to a special two-week encore of “Tip Your Bartender,” a social media initiative from PUNCH connecting our readers with bar teams across the country via Instagram. Back by popular demand, we’re bringing a new group of drink-makers from across the country to revisit the classics—from the spritz to the El Presidente.

Between June 15th and June 26th, for every dollar tipped to bar teams, the Bacardi family of brands has generously committed to matching it with an equal gift to our charitable partner, Restaurant Workers’ Community Foundation.

Kristina Magro and Greg Fleming, Lone Wolf | Chicago, Illinois

Kristina Magro and Greg Fleming’s Midwestern take on a Cosmopolitan replaces the traditional cranberry base with an unexpected pop of citrus courtesy of satsuma oranges, which are juiced and used in an oleo saccharum for a crisp and fresh version of the classic. If you can’t find satsumas, Cuties or clementines can be substituted.

1 ½ ounces Grey Goose vodka
¾ ounce satsuma juice
¾ ounce lemon juice
½ ounce satsuma oleo saccharum (see Editors’ Note)
¼ ounce simple syrup (1:1, sugar:water)
¼ ounce Suze
2 long dashes Peychaud's Bitters

Garnish: satsuma peel

Add all ingredients to a shaking tin. Add ice and shake vigorously. Double strain into chilled Martini glass, and garnish with a satsuma peel.

Editors’ Note
Satsuma Oleo Saccharum

Peel four satsumas, reserving the peel and setting aside the fruit for juicing. In a bowl, combine satsuma peels with one cup of fine sugar. Gently muddle the peels and sugar together to release their oils and let sit overnight. Strain out the peels, bottle and refrigerate for up to one week.
