Luca’s Pompeii elevates the Margarita template with a split base of tequila and mezcal, and two types of amaro (Cardamaro and Sfumato) for a juicy, smoky and bittersweet cocktail.
1 ¼ ounces Cazadores Bianco tequila
¼ ounce mezcal
1 ounce grapefruit juice
½ ounce simple syrup (1:1)
½ ounce Cardamaro
¼ ounce Sfumato
Garnish: grapefruit wedge (discarded), lava salt
Prepare a rocks glass by rimming the edge with a grapefruit wedge and rolling the exterior on a plate of lava salt until desired level of garnish is achieved. Add ice to your prepared glass and gently pour the Sfumato over the ice.
Add the remaining ingredients to a cocktail shaker. Add ice to the shaker, and shake until chilled. Strain into the rocks glass, where the cocktail will create a layered effect with the layer of Sfumato sitting on the bottom.
