Tip Your Bartender is a social media initiative from PUNCH connecting our readers with bar teams across the country via Instagram. We’re asking select bartenders to share their drinks (albeit virtually) and encourage the PUNCH audience to “tip” during the economically uncertain times ahead.

Princess Peach Daiquiri

The Princess Peach Daiquiri is an in-house favorite at Polite Provisions. Reminiscent of Hawaiian Fruit Punch, the tropical riff gets a grown-up update by way of pineapple-infused Bacardi 8 rum and muddled fresh fruit. Serve it up or over ice in a shortly glass and garnish with a lime wheel or raspberry—or both if you’re feeling festive.

2 ounces pineapple-infused Bacardi 8 (see Editors’ Note)
¾ ounce lime juice
¾ ounce simple syrup (1:1)
2 dashes peach bitters
3 raspberries

Garnish: raspberry and lime wheel

Add all ingredients to a shaker tin with ice. Shake vigorously to ensure raspberries are fully muddled into the cocktail. Strain the cocktail into your preferred glass (at Polite Provisions, this drink is served up in a coupe, but you can also serve it over ice in a short rocks glass).  Garnish with a raspberry and/or lime wheel.

Editors’ Note

Pineapple-Infused Bacardi 8
750 ml Bacardi 8
1 whole pineapple, peeled, cored and cut into chunks

Peel and cut the pineapple into chunks. Put the pineapple chunks into the 2-quart Mason jar container and add rum to cover. Seal the jar tightly and store in a cool, dry, and dark place to infuse.  Let sit for 5-7 days, giving the mason jar a good shake once a day. Begin tasting the contents after 5 days and continue until rum has reached your desired intensity of flavor.
