One of Wildhawk's more popular gin-based cocktails, the Proper Cup blends fortified and aromatized wines with an elegant amaro.

Tip Your Bartender is a social media initiative from PUNCH connecting our readers with bar teams across the country via Instagram. We’re asking select bartenders to share their drinks (albeit virtually) and encourage the PUNCH audience to “tip” during the economically uncertain times ahead.

Proper Cup

One of Wildhawk's more popular gin-based cocktails, the Proper Cup blends fortified and aromatized wines with an elegant amaro. A quick infusion of Earl Grey tea and an adaptable housemade bergamot infusion provide botanical dimension and body.

1 ¾ ounces Earl Grey tea-infused Bombay Sapphire gin (see Editors’ Note)
¾ ounce amontillado sherry
½ ounce Amaro Nonino
¼ ounce bianco vermouth
3 drops bergamot tincture (see Editors’ Note)
barspoon simple syrup (1:1)

Garnish: orange twist, expressed and discarded

Combine all ingredients and ice into a mixing glass and stir for 20 seconds. Pour into a chilled tea cup. Express orange oil over the cocktail.

Editors’ Note

Earl Grey-infused Bombay Sapphire Gin
In a Mason jar or non-reactive container, use 1 tea bag for every 4 ounces gin. For example, to infuse a full 750ml bottle, use 6 tea bags. Steep for 12- 15 minutes, remove tea bags and bottle until use. Wildhawk suggests Twinnings Earl Grey tea as it is less oily than other brands on the market.

Bergamot Tincture
In a Mason jar or non-reactive container, combine the peel of 3 bergamot with enough overproof vodka to cover. Infuse for 3 days. If bergamot is not available, then substitute peels from 1 lemon, 1 orange, and ½ of a grapefruit.
