Damon Boelte’s riff on the classic Americano—Campari, sweet vermouth and soda water—makes the very modern decision of swapping soda water for beer. It’s a simple swap, but introduces a whole new layer of texture and complexity to the minimalist aperitivo.


Serving: 1

  • 1 1/2 ounces Campari
  • 3/4 ounce sweet vermouth (preferably Dolin rouge)
  • 3/4 ounce sweet vermouth (preferably Carpano Antica)
  • 4 ounces pilsner

Garnish: orange wheel

  1. Add ice to a Collins glass.
  2. Add Campari and sweet vermouths.
  3. Top with pilsner and garnish with an orange wheel.
