Robert Simonson made several beach-to-glass cocktails with his homemade beach plum syrup, but his favorite was a Whiskey Sour variation: 2 ounces bourbon, ¾ ounce lemon juice, ¾ ounce beach plum syrup. “Sometimes making do does just fine,” he notes.

Beach Plum Syrup
1 cup sugar
1 cup water
1/2 cup whole beach plums, washed and destemmed.
Place all ingredients in a small saucepan. Bring to a boil, then simmer for 10 minutes. Let cool for at least an hour so that syrup takes on full color and flavor of plums. Strain. Keep in refrigerator. Will last a month.
