Blackberry-Lime Syrup

Sweet-tart and deep, dark purple, this summer simple syrup accompanies the Shady Lane cocktail from Brad Thomas Parsons’ book, Bitters.

Ingredients

Yield: 1 1/2 cups

  • 1 cup sugar
  • 1 cup sugar
  • 1 cup blackberries
  • 1 cup blackberries
  • zest of 2 limes
  • zest of 2 limes

Directions
  1. In a medium saucepan, combine the sugar, water, blackberries, and lime zest.
  2. Bring to a simmer, stirring occasionally to dissolve the sugar and pressing the blackberries against the side of the pan with the back of a wooden spoon.
  3. At the first crack of a boil, remove from the heat. Once cooled, pour the syrup through a strainer, discard the solids, and store in a glass jar.
