Playing up pineapple cordial’s grassy side, Kelsey Ramage pairs the tropical-minded ingredient with two ounces of rhum agricole alongside lemon juice and orange bitters, for acidity and balance.
- 2 ounces rhum agricole, preferably Rhum Clément
- 3/4 ounce green pineapple cordial (see Editor's Note)
- 3/4 ounce lemon juice
- 2 dashes orange bitters
- Combine all ingredients in a mixing tin and shake with ice.
- Strain into a chilled coupe.
