Bitter Queens Shirley 5-Spice Bitters

Inspired by a trip to Jamaica and its abundance of allspice trees, Mary Palac created this rich stirred cocktail. “Everything had this spice to it,” she recalls of the cuisine, which forms the inspiration for this funky, complex drink built on Jamaican rum. (The name borrows a phrase from Appleton distiller Joy Spence, in reference to how Jamaicans drink rum throughout their life.) To the rum base she adds nutty oloroso sherry, herbal Cynar and a measure of allspice dram, all accented by a dusting of freshly grated nutmeg.

Ingredients

Serving: 1

  • 1 1/2 ounces aged rum, preferably Appleton
  • 1 1/2 ounces aged rum, preferably Appleton
  • 1/2 ounce Cynar
  • 1/2 ounce Cynar
  • 1/2 ounce oloroso sherry
  • 1/2 ounce oloroso sherry
  • 1/4 ounce allspice dram
  • 1/4 ounce allspice dram
  • 2 drops saline solution
  • 2 drops saline solution

Garnish: grated nutmeg

Directions
  1. Combine all ingredients in a mixing glass over ice and stir until chilled.
  2. Strain into a chilled cocktail glass.
  3. Garnish with grated nutmeg.
