At Barely Disfigured in New York City, the Dirty Old Man takes the spicy with tequila template and brings mezcal, lime and pineapple juices and agave nectar to the mix, while red chile–infused Aperol brings the heat.

Ingredients

  • 3/4 ounce tequila, preferably Milagro
  • 3/4 ounce tequila, preferably Milagro
  • 3/4 ounce mezcal, preferably Ilegal
  • 3/4 ounce mezcal, preferably Ilegal
  • 3/4 ounce red chile–infused Aperol (see Editor’s Note)
  • 3/4 ounce red chile–infused Aperol (see Editor’s Note)
  • 3/4 ounce lime juice
  • 3/4 ounce lime juice
  • 3/4 ounce pineapple juice
  • 3/4 ounce pineapple juice
  • 1/2 ounce agave nectar
  • 1/2 ounce agave nectar
  • 2 dashes Peychaud’s bitters
  • 2 dashes Peychaud’s bitters

Garnish: dehydrated lime wheel

Directions
  1. Combine all ingredients in a cocktail shaker and shake with ice.
  2. Strain into a rocks glass.
  3. Garnish with a dehydrated lime wheel.

Red Chile–Infused Aperol
Steep 2 to 3 red chiles (or more, if desired) in 750 milliliters of Aperol for 24 hours. Strain.
