Eponine Collins

A French-inflected Collins from bar manager Sarah Morrissey at the newly opened Frenchette builds on a base of gin, complemented by Suze and Amaro Montenegro alongside both grapefruit and lemon juice.


Serving: 1

  • 1/2 ounce lemon juice
  • 1 ounce grapefruit juice
  • 3/4 ounce simple syrup
  • 1/2 ounce Amaro Montenegro
  • 1/2 ounce Suze
  • 1 1/2 ounces gin

Garnish: cucumber slices, basil leaves

  1. Combine all ingredients in a mixing tin and shake with ice.
  2. Strain into a collins glass over ice and top with soda.
  3. Garnish with two cucumber slices and two basil leaves.
