Tied for second place in our recent Mojito tasting, Erbin Garcia’s recipe gets built in the glass and asks for muddled mint, two ounces of Plantation 3 Star, one ounce of lime juice, three-quarters of an ounce of simple syrup, a single dash of Angostura bitters and one-and-a-half ounces of soda water. An unorthodox addition, the bitters escaped the judges’ attention, as it was minimal and fully integrated into the overall drink.

Ingredients
Serving: 1
- 2 ounces light rum, preferably Plantation 3 Star
- 1 ounce lime juice
- 3/4 ounce simple syrup
- 1 dash Angostura bitters
- 1 1/2 ounces soda water
- 2 mint sprigs
Garnish: mint sprig
Directions
- In a Collins glass, combine all ingredients apart from the soda water and muddle gently.
- Add the soda water and top with crushed ice.
- Swizzle to incorporate all the ingredients.
