Erbin Garcia’s Mojito

Tied for second place in our recent Mojito tasting, Erbin Garcia’s recipe gets built in the glass and asks for muddled mint, two ounces of Plantation 3 Star, one ounce of lime juice, three-quarters of an ounce of simple syrup, a single dash of Angostura bitters and one-and-a-half ounces of soda water. An unorthodox addition, the bitters escaped the judges’ attention, as it was minimal and fully integrated into the overall drink.

Ingredients

Serving: 1

  • 2 ounces light rum, preferably Plantation 3 Star
  • 2 ounces light rum, preferably Plantation 3 Star
  • 1 ounce lime juice
  • 1 ounce lime juice
  • 3/4 ounce simple syrup
  • 3/4 ounce simple syrup
  • 1 dash Angostura bitters
  • 1 dash Angostura bitters
  • 1 1/2 ounces soda water
  • 1 1/2 ounces soda water
  • 2 mint sprigs
  • 2 mint sprigs

Garnish: mint sprig

Directions
  1. In a Collins glass, combine all ingredients apart from the soda water and muddle gently.
  2. Add the soda water and top with crushed ice.
  3. Swizzle to incorporate all the ingredients.
