“I love the combination of Dubonnet and Pastis,” says Ezra Star of Drink in Boston. “Each one brings out something unexpected in the other.” Based on the Peggy cocktail, a two-to-one Martini improved with a touch of pastis and Dubonnet from the 1935 Mr. Boston, Ezra Star’s Finding Peggy brings Dubonnet front and center. “I wanted to take this combination and flip it on its head,” says Star. She means that literally: Star doubles the aperitif and reduces the gin by half. Spicy dry vermouth underscores the Dubonnet, which plays up the floral, anise quality of pastis.
