“It can be used in drops and dashes and even larger amounts like three quarters of an ounce” explains Kirk Estopinal of the go-to tiki ingredient, allspice dram. “The result can be everything from aromatic to bizarrely tactile and drying,” he adds. Here, Estopinal lands somewhere in the middle, using half an ounce to bring baked spice notes to the quasi-tropical mixture of vodka, coconut milk and lime juice.

Ingredients

- 1 1/2 ounces vodka
- 1/2 ounce allspice dram
- 1 ounce coconut milk
- 1 barspoon coconut cream
- 1/2 ounce demerara syrup (2:1 demerara:water)
- 1/2 ounce lime juice
Garnish: dehydrated lime wheel
Directions
- Combine all ingredients in a mixing tin and shake with ice.
- Strain into a hollowed out coconut or a double rocks glass over cracked or pebble ice.
- Garnish with a dehydrated lime wheel.
