In the Génépy Suisse, Ryan Maybee doubles down on winter drinking, incorporating pine-scented herbal liqueur génépy into a riff on the classic Absinthe Suisse cocktail. “The sweeter qualities of the cacao and coffee blend beautifully with absinthe, and work equally well with génépy,” he says.

Génépy Suisse sees the original Suisse’s crème de menthe swapped for crème de cacao, plus the addition of coffee liqueur, heavy cream and a garnish of grated nutmeg—all which results in essentially an elevated, adult mocha.

 

Ingredients

Serving: 1

  • 3/4 ounce génépy, preferably Dolin Génépy des Alpes
  • 3/4 ounce génépy, preferably Dolin Génépy des Alpes
  • 3/4 ounce crème de cacao
  • 3/4 ounce crème de cacao
  • 3/4 ounce coffee cordial
  • 3/4 ounce coffee cordial
  • 3/4 ounce heavy cream
  • 3/4 ounce heavy cream
  • 3 dashes absinthe
  • 3 dashes absinthe

Garnish: grated nutmeg

Directions
  1. Add all ingredients to a shaking tin and shake well with ice.
  2. Strain into a chilled coupe.
  3. Garnish with grated nutmeg.
