Goencho Dukor (Goan Pig)

Drawing inspiration from the Moscow Mule, the cocktail found die-hard fans in Buland Shukla’s circle of friends who shifted their loyalty from beer to feni, a spirit made from distilled cashew fruit. Naturally, the drink, designed to beat the Goan heat, found its way to his menu at For the Record, India’s first dedicated vinyl bar.

  • 1 ounce feni, preferably Spirit of India Cashew Feni
  • 1/4 cucumber, chopped
  • 1 mint sprig
  • ginger ale, to top

Garnish: cucumber ribbon, mint sprig, ground cinnamon

  1. Pour the feni into a mixing glass and muddle in some chopped cucumber and mint.
  2. Strain the mixture into a highball glass filled with ice.
  3. Top with ginger ale.
  4. Garnish with a cucumber ribbon, mint sprig and a dusting of cinnamon.
