Drawing inspiration from the Moscow Mule, the cocktail found die-hard fans in Buland Shukla’s circle of friends who shifted their loyalty from beer to feni, a spirit made from distilled cashew fruit. Naturally, the drink, designed to beat the Goan heat, found its way to his menu at For the Record, India’s first dedicated vinyl bar.
Goencho Dukor (Goan Pig)

Ingredients
- 1 ounce feni, preferably Spirit of India Cashew Feni
- 1/4 cucumber, chopped
- 1 mint sprig
- ginger ale, to top
Garnish: cucumber ribbon, mint sprig, ground cinnamon
Directions
- Pour the feni into a mixing glass and muddle in some chopped cucumber and mint.
- Strain the mixture into a highball glass filled with ice.
- Top with ginger ale.
- Garnish with a cucumber ribbon, mint sprig and a dusting of cinnamon.
