Hearty Handshake

A Manhattan with the fireside appeal turned up to 11, Jack Schramm’s Hearty Handshake sees the traditional rye and sweet vermouth combo kicked up with an easy-to-make treacle flavored with cold brew concentrate and chai. A few dashes of absinthe counterbalances the sweetness. Serve up in a coupe with an orange twist.

 

Ingredients

Servings: 6

  • 10 ounces rye, preferably Ragtime Rye
  • 10 ounces rye, preferably Ragtime Rye
  • 8 3/4 ounces water
  • 8 3/4 ounces water
  • 5 ounces sweet vermouth, preferably Carpano Antica
  • 5 ounces sweet vermouth, preferably Carpano Antica
  • 1 1/4 ounce Chai Coffee Treacle (see Editor's Note)
  • 1 1/4 ounce Chai Coffee Treacle (see Editor's Note)
  • 10 dashes absinthe
  • 10 dashes absinthe

Garnish: orange twist

Directions
  1. Combine all ingredients in a sealable 750ml bottle and store in the freezer.
  2. When ready to serve, pour into a chilled coupe and garnish with an orange twist.
Editor's Note

Chai Coffee Treacle
16 ounces cold brew concentrate, preferably Grady's
5 ounces Kalustyan's Sweet Chai Mulling Spice (or 3 chai tea bags)
1 454-gram can Lyle's Black Treacle

Add all ingredients to a saucepan. Bring to a simmer, stirring regularly. Turn off the heat, steep for 5 minutes. Strain and store in the refrigerator in a resealable container. Will keep for up to a month.

Leftover treacle can be used as a modifier in Old-Fashioned style cocktails or Gin and Tonics.
