Kenta Goto’s (of the Japanese-style cocktail bar, Bar Goto) distant riff on the Improved Whiskey Cocktail that combines barley shochu, aged gin and hop liqueur.

Serving: 1

  • 2 ounces barley shochu, preferably Mizu no Mai
  • 2 teaspoons aged gin, preferably Berkshire Ethereal Gin
  • 1 1/2 teaspoons cane syrup (2:1, sugar:water)
  • 1 pinch Hitachino no Shizuku

  1. All all ingredients to a mixing glass.
  2. Add ice, and stir until chilled.
  3. Strain into a Sake Masu (wooden sake box).

Okay. I’ll bite. What exactly is “Hitachino no Shizuku”? (What the owl DOESN’T drop? Because no one wants what the owl drops in their beverage.)

Seems as though it’s distilled hopped malt ale. Dunno why they’d use a pinch as a measurement though.
