The Greek spirit mastiha is “a close friend to gin and blanco tequila,” according to Thanos Prunarus, owner/manager of Baba Au Rum. Agave and mastic trees are both slow-growing, hot climate plants that lend their resin to make the spirits in this sweet and vegetal sour.

Ingredients

  • 1 1/2 ounces kaffir lime-infused blanco tequila
  • 1 1/2 ounces kaffir lime-infused blanco tequila
  • 3/4 ounce mastiha
  • 3/4 ounce mastiha
  • 1/3 ounce fresh lemon
  • 1/3 ounce fresh lemon
  • 1/3 ounce simple syrup (1:1)
  • 1/3 ounce simple syrup (1:1)
  • 2 drops celery bitters
  • 2 drops celery bitters

Directions
  1. Combine all ingredients in a cocktail shaker and shake.
  2. Fine strain into a coupe glass.
