At Trick Dog in San Francisco, the menu changes seasonally based on one unifying concept. In winter of 2014, the bar introduced its zodiac menu, featuring twelve drinks that corresponded to each astrological sign.

Kind, flirtatious, diplomatic and gentle, Libras are said to be the most desirable sign of the zodiac (and one of the most attractive). Their time comes at the change of the seasons when the world is in flux, and we’re all settling into a new perspective and readjusting to our surroundings—drinking warmer things, taking out flannels and long underwear. Like a fluffy autumn sweater, Morgan Schick’s Libra cocktail is thickly blanketed in egg white, which covers a savory-sour mixture of tequila, tangerine and lime juices and housemade dill syrup—the final pull of summer’s herbs.

Ingredients

Serving: 1

  • 2 ounces tequila (preferably Tequila Ocho Plata)
  • 2 ounces tequila (preferably Tequila Ocho Plata)
  • 3/4 ounce dill syrup (see Editor's Note)
  • 3/4 ounce dill syrup (see Editor's Note)
  • 1 ounce tangerine juice
  • 1 ounce tangerine juice
  • 1/2 ounce lime juice
  • 1/2 ounce lime juice
  • 3/4 ounce egg white
  • 3/4 ounce egg white

Garnish: matcha powder and a dill sprig

Directions
  1. Add all ingredients to a cocktail shaker, and shake without ice.
  2. Add ice and shake again until chilled.
  3. Strain into a cocktail or coupe glass.
  4. Garnish with a bit of matcha powder and a dill sprig.
Editor's Note

In a saucepan over low heat, add 1 cup of sugar and 1/2 cup water. Stir until dissolved. While the mixture is still hot, add approximately 1 1/2 ounces of fresh dill. Cover and let steep until cool. Strain out dill, and store in an airtight container or glass bottle in the fridge for approximately 1 month or until ready to use.
