Colin Carroll and Alex “Goose” Gesler came up with the Low Key shortly after signing their lease for 5 & Dime. Their philosophy centers around simply made drinks with a touch of complexity, in this case a bourbon highball sees the addition of a house-made herb-lemon syrup.

Ingredients
Serving: 1
- 2 ounces bonded bourbon, preferably Early Times
- 1 1/4 ounces lemon syrup (see Editor’s Note)
- soda water, to top
Directions
- Combine all ingredients in an ice-filled Collins glass.
- Stir to integrate.
- Top with soda water.

Lemon Syrup:
2 cups lemon juice
2 cups honey
3 sprigs tarragon
3 sprigs thyme
3 sprigs sage
3 sprigs rosemary
2 cups pea flowers
Wrap herbs and pea flowers in a sachet. Combine lemon juice and honey in a medium saucepan and heat until the mixture reaches a simmer. Turn off heat and add herb sachet. Steep until cool, about 1 hour. Remove sachet and strain.
