A crowd favorite from the pop-up Boston Baijiu Bar’s first menu, this cocktail showcases the Chinese spirit, which Nick Lappen likens to rhum agricole for its funky flavor. The simple and refreshing Daiquiri built with a split base allows the baijiu to shine.

Ingredients

  • 1 ounce strong-aroma baijiu, preferably Ming River Baijiu
  • 1 ounce strong-aroma baijiu, preferably Ming River Baijiu
  • 1 ounce unaged Jamaican rum, preferably Rum Bar Silver
  • 1 ounce unaged Jamaican rum, preferably Rum Bar Silver
  • 1 ounce lime juice
  • 1 ounce lime juice
  • 3/4 ounce simple syrup
  • 3/4 ounce simple syrup

Directions
  1. Combine all ingredients in a shaker tin and shake with ice.
  2. Strain into a chilled glass.
