Pietro Collina’s take on the Daiquiri was the top vote-getter in our blind tasting of 20 Daiquiri recipes. His formula couldn’t have been more classic: two ounces of Flor de Caña 4-Year Extra Dry rum, one ounce of double-strained lime juice and three-quarters of an ounce of rich cane syrup (2:1) that was equal parts bold and clean.

Ingredients

Serving: 1

  • 2 ounces lightly aged rum, preferably Flor de Caña 4-Year Extra Dry
  • 2 ounces lightly aged rum, preferably Flor de Caña 4-Year Extra Dry
  • 1 ounce lime juice, double strained
  • 1 ounce lime juice, double strained
  • 3/4 ounce rich cane syrup, (2:1, cane sugar:water)
  • 3/4 ounce rich cane syrup, (2:1, cane sugar:water)

Directions
  1. Add all ingredients to a shaking tin, add ice and shake until chilled.
  2. Strain into a coupe glass.
