Pisco Chilcano

At Belmond’s Miraflores Park Hotel, Fiorella Larrea offers her take on a Peruvian classic, the Pisco Chilcano. A distant cousin of the Pisco Sour, this simple recipe builds on a base of unaged brandy with a measure of lime juice and a topper of ginger ale, plus a dash of Angostura bitters.

Ingredients

Serving: 1

  • 2 ounces pisco
  • 2 ounces pisco
  • 1/2 ounce lime juice
  • 1/2 ounce lime juice
  • 4 ounces ginger ale
  • 4 ounces ginger ale
  • 2 drops Angostura bitters
  • 2 drops Angostura bitters

Garnish: lime twist, wheel or wedge

Directions
  1. Fill a highball glass with ice.
  2. Add the pisco and lime juice.
  3. Top with ginger ale and add the bitters.
  4. Garnish with a lime twist, wheel or wedge.
