Pomegranate Shrub

I first had pomegranate in a Greek mythology course in college. We were reading the story of Persephone, daughter of Zeus and queen of the underworld, who is often depicted in Greek art holding a pomegranate. I was a Midwestern boy, and this was the 1980s, and so pomegranate was exotic and mystifying. I was immediately hooked. Fresh pomegranate juice is best in this drink, but honestly, juicing pomegranate is tedious and messy work. No one will judge you for using a commercial juice—just make sure it’s 100-percent pomegranate.

Ingredients

Yield: 4 1/2 cups

  • 3 cups pomegranate juice
  • 3 cups pomegranate juice
  • 1 1/2 cups apple cider vinegar
  • 1 1/2 cups apple cider vinegar
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups granulated sugar

Directions
  1. Add all ingredients to a large bottle, and shake to combine.
