Rickey Royale

The team behind White Lyan played with in-house fermentation, developing a number of mock “wines” that they then integrated into cocktails. Here, they build on a classic rickey formula and kick it up with the addition of a housemade Persian lime “fizz.”


Serving: 1

  • 2 ounces London dry gin, preferably Colombo
  • 1/2 ounce lime juice
  • 1/2 ounce gomme syrup
  • Iranian Lime Rickey Fizz, to top

Garnish: whole lime peel

  1. Shake all ingredients except the Iranian Lime Rickey Fizz with ice and strain into a chilled Champagne flute.
  2. Top with chilled Iranian Lime Rickey Fizz and garnish with a whole lime peel.
