The team behind White Lyan played with in-house fermentation, developing a number of mock “wines” that they then integrated into cocktails. Here, they build on a classic rickey formula and kick it up with the addition of a housemade Persian lime “fizz.”
- 2 ounces London dry gin, preferably Colombo
- 1/2 ounce lime juice
- 1/2 ounce gomme syrup
- Iranian Lime Rickey Fizz, to top
Garnish: whole lime peel
- Shake all ingredients except the Iranian Lime Rickey Fizz with ice and strain into a chilled Champagne flute.
- Top with chilled Iranian Lime Rickey Fizz and garnish with a whole lime peel.
