Thai cuisine aficionado Andy Ricker aims to replicate his southeastern Thai dining experiences with the Salted Plum Vodka Collins, an alcoholic twist on an existing Thai drink template. The saltiness of the plum combined with citrus results in a complex, thirst-quenching cocktail capable of holding its own when paired with food.

Ingredients

  • 1 1/2 ounces vodka
  • 1 1/2 ounces vodka
  • 1 salted plum, rinsed
  • 1 salted plum, rinsed
  • 1 ounce lemon juice
  • 1 ounce lemon juice
  • 3 sugar cubes
  • 3 sugar cubes
  • soda water, to top

Garnish: lemon wedge and Amarena cherry

Directions
  1. Muddle plum, lemon juice and sugar in a pint glass.
  2. Add ice and vodka, then shake.
  3. Strain into Collins glass with ice and top with soda water.
  4. Garnish with a lemon wedge and Amarena cherry.
