In our house Gin & Tonic recipe we cut down the proof by splitting the base between gin and fino sherry, and kick up the aromatics by way of a dose of both lime and mint.
- 3/4 ounce gin
- 1 1/2 ounces fino sherry
- 3/4 ounce lime
- 1/4 ounce simple syrup
- 5 mint leaves
- tonic water, to top (preferably Fever Tree)
Garnish: Mint bouquet, lime wheel
- In a Collins glass, muddle the mint leaves in the simple syrup.
- Add the gin, sherry and lime and fill with ice.
- Top with tonic water.
- Garnish with a mint bouquet and a lime wheel.
