Paul Calvert’s Suppressor #21 is a simple, low-ABV combination of fortified wines kicked up with bitter Cynar. “There’s a cool delicacy to the flavor profile of a fortified wine-based drink,” Calvert says—a mindset exemplified here by the elegant pairing of Barolo chinato and amontillado sherry.

Ingredients

Serving: 1

  • 1 ounce Barolo Chinato
  • 1 ounce Cynar
  • 1 ounce amontillado
  • 2 dashes orange bitters, preferably Regans'

Garnish: grapefruit peel

Directions
  1. Stir and strain into a rocks glass over a large cube of ice.
  2. Express and discard grapefruit peel over the top of the drink.
