The Red Light

Charles Joly, Drawing Room | Chicago

Charles Joly invented this unusual, bitters-heavy drink in 2009 while at the Drawing Room in Chicago. Both genever and Underberg were hard-to-find novelties at the time, making the cocktail rather adventurous. The odd trio of ingredients make for a fruity, herbal, and soothing drink that has a vaguely yuletide feel about it.
