Tree-Chu-Hi Article Recipe

The shochu highball, more popularly known as a chu-hai, is a combination of shochu, fruit juice and soda water, and is served both à la minute and prepackaged in cans. With his Tree-Chu-Hi, Orlando Franklin McCray marries a barley-based shochu with tonic liqueur and Fever-Tree Sparkling Pink Grapefruit soda. “I tend to avoid using grapefruit juice as a cocktail ingredient because of how widely they can vary in flavor,” says McCray. “The grapefruit soda provides an opportunity for consistent flavor.”

Ingredients

Serving: 1

  • 1 ½ ounces Mizu Saga Barley Shochu
  • 1 ½ ounces Mizu Saga Barley Shochu
  • ½ ounce Bittermens Commonwealth Tonic Liqueur
  • ½ ounce Bittermens Commonwealth Tonic Liqueur
  • 4 ounces Fever-Tree Sparkling Pink Grapefruit soda
  • 4 ounces Fever-Tree Sparkling Pink Grapefruit soda

Garnish: grapefruit zest or twist, finishing salt

Directions
  1. Combine all the ingredients in a Collins glass filled with ice.
  2. Swizzle to combine ingredients.
  3. Garnish with grated grapefruit zest or a grapefruit twist, and finish with a pinch of salt.
