True Chesapeake Oyster Co.’s Southside is an ode to the drink’s history at Baltimore-area country clubs and is enjoyed across the region at “hunt cups,” steeplechase-like events that have a strong tailgating tradition and Derby-like costume. The tall, refreshing drink is served on crushed ice, topped with ginger beer, and uses the bar’s house Southside mix—a traditional means of preparing Baltimore-style Southsides for many decades now.
- 2 ounces aged rum, preferably Mount Gay Eclipse
- 2 ounces Southside mix (see Editor’s Note)
- ginger beer, to top
Garnish: mint, lime
- Combine rum and Southside mix in a 16-ounce glass.
- Top with pebble ice and stir briefly.
- Top with ginger beer.
Blend 1/2 pound mint leaves, 1/2 cup simple syrup, 1/2 cup lime juice and 1/2 cup lemon juice. Fine strain and bottle. Keeps in the refrigerator for 1 week.
