Watermelon Sgroppino

Mezcal meets watermelon sorbet in Fanny Chu’s updated Sgroppino. With a smoky-sweet profile, her modern take is more than an after-dinner drink, it’s an all-day affair. For a less smoky profile, try it with a different white spirit like gin, rum, tequila or vodka. 

Ingredients
  • 1 scoop watermelon sorbet (see Editor's Note)
  • 1 scoop watermelon sorbet (see Editor's Note)
  • 1 1/2 ounces mezcal
  • 1 1/2 ounces mezcal

Garnish: mint leaf, lime wheel

Directions
  1. Serve the sorbet in a coupe and top with mezcal.
  2. Garnish with a mint leaf and a lime wheel.

Watermelon Sorbet
20 ounces watermelon juice
10 ounces simple syrup
1 ounce lime or lemon juice

Combine the watermelon juice, simple syrup and lime (or lemon) juice in a sealed container and refrigerate for at least 2 to 4 hours. Then, pour the mixture into a sorbet or ice cream maker and follow manufacturer's instructions.
