Tip Your Bartender: Gage & Tollner, Brooklyn

Gage & Tollner’s Martini variation is based on a 1920s recipe from Harry MacElhone, the owner of Harry’s New York Bar in Paris.

Turf Martini

Jelani Jah Johnson, Gage & Tollner | Brooklyn, New York

There are a few different versions of this Martini variation—Gage & Tollner’s is based on a 1920s recipe from Harry MacElhone, the owner of Harry’s New York Bar in Paris. Essentially a Martini with a dash of absinthe and maraschino liqueur, this adaptation is also known as the Tuxedo No. 2.

2 ½ ounces Bombay Sapphire gin
1 ounce dry vermouth
½ teaspoon maraschino liqueur
¼  teaspoon Pernod absinthe
1 orange twist

Garnish: lemon twist

Add the first four ingredients to a mixing glass. Express the orange twist into the glass, then discard. Stir and strain into a small Martini glass, reserving any additional liquid in a small carafe set on ice. Garnish with a lemon twist.
