The Billie Jo, named for two of Bossart’s favorite style icons (Billy Porter and Billie Joe Armstrong) is a cross between two classic highballs—Scotch and soda and white port and tonic—that comes on playfully but goes much deeper beneath the surface. The “funky fresh” notes of the Glen Moray Chardonnay Cask help harmonize the two spirits, along with a touch of citrus and a pinch of sea salt. Taste the drink before and after applying the salt at the end to really taste the difference.
