Dutch Courage’s Southside

Brendan Dorr | Baltimore

Brendan Dorr may be a Maryland native, but his allegiance to gin is yet stronger, which explains why he opts for the botanical-driven spirit over rum, the city’s preferred base spirit in a Southside. “I think the classic gin and mint go so well together. There’s botanicals, fresh herbs—it just pops.” His version opts for lime over the original South Side Sportsman’s Club’s lemon and skips the soda, giving the cocktail a minty Gimlet vibe.
