“Old Tom is a beautiful thing,” says Danny Shapiro. “I enjoy its versatility—it plays so well with so many things.” Here, he positions the slightly sweet gin against bittersweet Amargo-Vallet liqueur, then bolsters those flavors with lemon and orgeat, for a touch of sweetness.


Serving: 1

  • 1 ounce Old Tom gin, preferably Scofflaw
  • 1 ounce Amargo Vallet
  • 3/4 ounce lemon juice
  • 3/4 ounce orgeat

Garnish: lemon wedge

  1. Combine all ingredients in a shaker and shake with ice.
  2. Strain into a rocks glass over ice.
  3. Garnish with a lemon wedge.
