Natasha Bermudez gives the Yayo, the classic gin-based cocktail from Madrid, a Brooklyn makeover, inspired by her time living and working in Spain. Her version served at Bar Llama in Madrid features olive brine tonic, but at Brooklyn’s Llama Inn she makes one with Roku gin, Spanish sweet vermouth and a rosemary-grapefruit tonic. “The Brooklyn version of the Yayo is a top-three seller every day,” says Bermudez.

Ingredients

Serving: 1

  • 1 ounce gin, preferably Roku
  • 1 ounce gin, preferably Roku
  • 1 1/2 ounces sweet vermouth, preferably Lustau Vermut Rojo
  • 1 1/2 ounces sweet vermouth, preferably Lustau Vermut Rojo
  • 1 1/2 ounces London Essence Grapefruit & Rosemary Tonic
  • 1 1/2 ounces London Essence Grapefruit & Rosemary Tonic

Garnish: 3 Castelvetrano olives

Directions
  1. Build ingredients in a double Old-Fashioned glass.
  2. Stir with a large ice cube.
  3. Garnish with the olives.
