An extra bittersweet take on the Rabo de Galo, Brazil’s most popular cachaça cocktail, the Amaro de Galo introduces Averna to the mix. The drink is created by São Paulo bartender Néli Pereira, who serves variations on the classic at her bar Zebra.

Ingredients

Serving: 1

  • 1 1/4 ounces cachaça
  • 1 1/4 ounces cachaça
  • 1/4 ounce Cynar
  • 1/4 ounce Cynar
  • 1/4 ounce red vermouth
  • 1/4 ounce red vermouth
  • 1/4 ounce Amaro Averna
  • 1/4 ounce Amaro Averna

Garnish: lemon slice or peel

Directions
  1. Add all ingredients to a glass with ice and stir until chilled.
  2. Garnish with a lemon slice or peel.
