What does a bar owner drink to wash down the end-of-night bookkeeping, long after the ice bins are emptied? New York’s Sother Teague created a beverage just for this occasion, aptly named Just the Paperwork. It’s a nod to 19th-century scaffa, a format of mixed drink that is un-iced and consumed at room temperature. Simple, sippable and a tad bitter, of course.

Ingredients

  • 3/4 ounce Amaro Nonino
  • 3/4 ounce Amaro Nonino
  • 3/4 ounce Cocchi Americano
  • 3/4 ounce Cocchi Americano
  • 1 1/2 ounces Cognac, preferably Pierre Ferrand Cognac
  • 1 1/2 ounces Cognac, preferably Pierre Ferrand Cognac
  • dash of orange citrate
  • dash of orange citrate

Directions
  1. Build in a rocks glass and stir to combine.
