Karri Kiyuna loves a whisky highball. “Like, a lot.” For the “Head Bird” at San Francisco’s Wildhawk, theres no drink more refreshing. This variation is a winter-ready version, with the addition of some Martini & Rossi Bitter lending earth and saffron notes. “This is my little shout-out to all the Bettys who love their whiskey,” Kiyuna says.

Ingredients

Serving: 1

  • 1 1/2 ounce Scotch, preferably Dewar’s 12 Year Scotch Whisky
  • 1 1/2 ounce Scotch, preferably Dewar’s 12 Year Scotch Whisky
  • 1/2 ounce Martini & Rossi Bitter
  • 1/2 ounce Martini & Rossi Bitter
  • soda to top
  • soda to top

Directions
  1. Build in a collins glass over ice. 
  2. Top with cold club soda and gently stir.
